Hmm? Tailoring? Leatherworking? Herbs? Alchemy? JC? etc.?
In terms of low investment, skinning, herbalism and mining make the most gold — this is because you can gather materials and sell them to those who need them for crafting professions.
In terms of those which require materials (for which you will need to spend money on buying or spend time on farming), enchanting and jewel-cutting seem to be most profitable.

Mining, Herbalism, Enchanting can make alot of money but you sometimes have to spend alot for matts.
